Any kind of fruit can be made into a fool, but I like the gooseberry version best. If you sift the cooked fruit rather than liquidise it, you will avoid the abrasive, hairy quality that people complain about.
Top and tail the gooseberries, simmer them in 30ml water with the elderflower until soft, and sweeten to taste. Remove the elderflower sprigs, add the orange flower water, then pass the fruit through a fine sieve. Leave to cool.
