This incredibly easy emergency pudding is named after the Trench word for ‘blinds’ because of the way the pastry is cut. Apples and marmalade are something readily found in my house and I usually have a packet of puff pastry in the freezer; otherwise you can knock up some shortcrust or rough puff quickly. I only ever make puff pastry if I am treating myself to croissants.

I use tart eating apples for this pudding, as I like the apple to keep its texture rather than collapse.
