Shades of childhood and, for me, the perfect comfort food. When I go and visit my friend April O’Leary who taught me at school, I always pester her for rice pudding (which she makes very well on top of the stove, so no skin; I quite like skin, however, so I make mine in the oven). Over the years I have collected many rice pudding recipes, including the rather grand Marquis Pudding, so I offer some of these variations for your delectation.
