This is very popular nowadays and every chef has a recipe for it. I only offer mine because I like to use panettone. After Christmas you can buy these cheaply, which I do, and store them until you are ready to use them. The more stale they are the better, and they already contain all the candied fruit and peel you will need. The other name for bread and batter pudding is nursery pudding - total comfort!
