There are many, many recipes for the little tarts that Henry VIII named for his wives’ ladies-in-waiting (some of whom he married). I have seen recipes using wet and dry curds, with mashed potato and even clotted cream. I suspect that given Henry’s Yorkshire connection they may well have been curd cakes. However, this is a comfort book, not a history book, so I have given you the recipe that I like the best.
