This is an Irish recipe and may well have come from my grandmother who lived in a tent! Its name reflects its method of cooking and it is very easy - foolproof, in fact.

It is nice to have a cake about the place, so you can put a slice in your pocket for a hunting, shooting or fishing trip. You can add all sorts of things to a boiled fruit cake; I ate a sensational one made by the 2008 Chairman of the Sandringham WI which contained pineapple.
