This is a Gloucestershire recipe; I like to think the tarts are named after Sir John Oldbury, who was the model for Shakespeare’s Falstaff, but I fear this is only my whimsy.

For the Hot-Water Crust Pastry

  • 450 g plain flour
  • 100 g lard

Preheat the oven to 200°C/400°F/gas mark 6.
