The shellfish and crustacea for this delicious salad can vary according to availability, as long as whatever you use is perfectly fresh and sweet to the taste. The key is that when choosing your ingredients, nothing should smell unpleasant or fishy, retaining instead the fresh perfume of the seashore. Baby clams (vongole) can be muddy, especially if not fished from sandy shores, so be sure to leave them in a bowl of cold water for a few hours before rinsing thoroughly and steaming.
