This is one of my favorite family recipes. It was one of the many ways we used the endless supply of zucchini that seemed to spring up in the vegetable garden overnight! This soup is really easy to make and can be finished with a generous grating of Parmigiano Reggiano or a handful of chopped fresh herbs. Use really fresh, firm zucchini that have not begun to lose their luster or firmness.
