Everyone needs a good tomato sauce. This one is full of flavour and works pretty well with tinned tomatoes. It’s good with hamburgers, steak, good sausages, and hot or cold starters, and makes a great omelette filling with some grated Swiss cheese.

Ingredients

  • 25 g butter
  • 1 medium Spanish onion, finely chopped
  • 1 kg firm

Method

Melt the butter in a medium saucepan and soften the onion over medium heat for about 10 minutes, without browning. Add all the other ingredients except the sugar and salt and cook slowly, covered, for 15 minutes. Uncover and cook over low heat for at least half an hour. The longer you cook it the better. At the end of cooking add sugar if necessary – unless the tomatoes are ripe, you’ll need it
