This suggested the skate stuffing. It’s one of the best sauces I’ve come across for grilled or fried fish or chicken, but it’s great with stuffed squid, stirred into fish soup or spread on fried bread with eggs, and I’ve even eaten it with fried potatoes. Very good too. It comes from around Tarragona in Spain, where they particularly enjoy it with prawns.
There are many versions of this sauce but the central principle is the pungency of garlic
