This is for a salad of mildly flavoured leaves – cos or Romaine, Webb’s, lamb’s lettuce, baby spinach – given a bit of oomph with some rocket or red trevise.


  • 4 tbsp olive oil
  • 1 finely chopped shallot
  • 1–2 tbsp finely chopped


Liquidize together. Add salt to taste.
