A Creamy Mustard Dressing

For all kinds of salads – with an old-fashioned sort of flavour, but nice.


  • 1 hard-boiled egg yolk
  • ½ tsp dry mustard
  • 1 tsp Dijon or German-type mustard
  • 2 tbsp olive oil
  • ½ tbsp Worcestershire sauce
  • 1 tsp red wine vinegar
  • 1 shallot, very finely chopped
  • 3 tbsp single cream
  • salt and freshly ground black pepper


Mash together the egg yolk with the mustards and gradually incorporate the oil. Whisk in the sauce, the vinegar, the shallot and the cream. Season to taste.
