This is very good with salads containing apple, beetroot, chicory, watercress or cauliflower (or all five together).


  • 2 tsp caraway seeds, pulverized in a mortar or spice mill
  • rind of ½ a large orange, grated
  • 50 ml orange juic


Put all the ingredients in the blender and whizz for 1 minute. If you replace the caraway with crushed fennel seeds you have a good dressing for a salad of thinly sliced fennel bulb, oranges and black olives.
