I guess this is another variation on the theme of baba ganoush and muttabbul, but to my mind this has the virtue of being uncompromisingly robust – strong flavours delivered with no nonsense. This could be part of an hors d’oeuvres including bagna cauda and hummus, eaten with an eclectic mix of raw vegetables or (better, I think) with good granary bread cut into thick soldiers, toasted in the oven until brown and crisp, a
