A quick, refreshing cold soup for a hot day and when decent tomatoes are available. Don’t try this as a hot soup. You can cut down on the cream if you’re in denial. If you want something crunchy to go with this, try the garlic croutes. If you like the texture of the avgolemono that follows, this also takes well to a bit of jellification. Use 1 sachet of gelatine.
