Although they look like haricot beans, only a bit larger, cannellini beans have a slight edge on flavour. Creamier, slightly less earthy, these beans are only available in their dried form, unfortunately, although I’m sure we could perfectly well grow them here. This is one of those soups that you could eat more or less as a vegetable, in the way the Italians seem to, with a small amount of liquid, some of which is olive oil.
