A good cauli is a fine thing – hard, creamy-white and heavy, it’s rather a beautiful object with a distinct and interesting flavour, neither coarse nor delicate. It’s a good base for a veg salad, mixed with brown bread croutons, black olives, capers, toasted almonds and bits of orange, and makes a lovely purée when mixed with reduced double cream and nutmeg.
This is an intriguingly delicate soup with the creamy Gorgonzola flavour playing a polite and restrained supporting role. You
