I love the slight menthol quality of cardamom, apart from the delicacy of its flavour. It has a great affinity with orange (try it to flavour ice cream), as orange has with crab. This simple logic led to this salad, which is expensive, but worth it. I prefer crab to lobster, so if you compare prices crab doesn’t seem so expensive. You could mix white and dark meat, but it’s better with all white. If fresh cooked crab is hard to get, frozen is next best, but make sure you pick through
