This is a four-tiered puff-pastry ‘sandwich’ using a very thick cheese sauce as the filling. This can be flavoured with garlic, mustard, mushrooms, bacon, green herbs and so on. It’s a very good filling for cheese profiteroles or gougères. Here it’s used to make an impressive first course for a posh supper, but it would easily serve as a main course for two.
