Baked Hake with Cappon Magro Sauce: To bake the fish


  • 2 tbsp olive oil
  • 2 large cloves of garlic, finely chopped
  • 1 small glass dry white wine
  • 4 hake steaks or fillets, each weighing about 175g
  • salt


Preheat the oven to 400°F/205°C/Gas6.

Pour the olive oil into a medium-sized gratin dish and brush it over the base and sides. Sprinkle over the garlic and gently pour in the wine. Place the hake on top, sprinkle lightly with salt, and cover with a buttered/oiled sheet of cooking foil. Bake for 25 minutes in the middle of the oven.
