Don’t be put off by the sound of this, as the chocolate is merely an embellishment, used to give the sauce a little extra richness and gloss. As the sauce is also based on the red wine used to marinate the venison, there’s no danger of it becoming too rich.

The marinade is used to add more flavour to the meat, not to tenderize it.
