Sift together the first four ingredients. Beat the egg with the milk and combine the two mixtures. Add the melted butter and the orange rind. Bring a pan of stock or water to a simmer, turn the heat down a little, and drop blobs of the mixture from a metal teaspoon into the hot liquid. Poach until they rise to the surface and remove with a slotted spoon.
