Another excellent beetroot dish (see Beetroot Bavarois). Beetroot and orange make good companions, and the addition of celeriac gives this dish an extra dimension. The really important thing, though, is the marmalade, which must be good quality and bitter – home-made? This goes brilliantly with venison, wild boar or hare, but is very good on its own.
