This is a simple nursery sort of pud but, Harry Potter-like, it can be eaten very happily by grownups, especially with the Calvados cream. You can alter the proportions of sponge to apple if you like: here the top is about twice the thickness of the apple base. Just add more apples if you wish. The sponge is also good on its own, flavoured with vanilla or orange rind.
