This is a recipe I’ve borrowed from our friend Vicky Jones, who wrote an excellent book called Dordogne Gastronomique and is the guiding spirit behind (of all things) the Abergavenny Food Festival. Always on the lookout for good gluten-free recipes, I jumped on this one because it’s such a good vehicle for butternut squash, and mercifully a fair distance away from pumpkin pie.
