Melt the chocolate and butter together in a medium bowl set over hot water. Stir occasionally and when melted stir in the coffee and egg yolks. In a clean, dry medium mixing bowl, whizz the egg whites with the cream of tartar and salt until soft peaks form. Sprinkle in the sugar and beat until stiff – a minute or two.
