This dish, light and pleasant, can be prepared in a jiffy. I like to cook it in a wok, quite my favourite utensil for cooking many of the vegetable dishes, as well as some meat dishes such as shawerma.

Ingredients

  • 1 kg (2 lb 4 oz) marrows
  • 4

Method

Slice the marrows lengthwise into julienne strips. In a frying pan or wok, heat 2 tablespoonfuls of the oil and add half the garlic and marrows and stir-fry for 8 minutes. Remove to a plate and repeat with the rest of the quantities. Season with salt and pepper to taste and serve with a meat dish or
