Ingredients: 50 g (2 oz) butter or 2 tbs samneh; 50 g (2 oz) butter or 2 tbs samneh; ¼ tsp saffron pistils; 4 garlic cloves; ⅛ tsp cardamom; 2 cinnamon sticks (You can substitute the above spice with 2½ tsp mixed spices); 1 tsp allspice; ¼ tsp nutmeg; 3 cups round-grain rice; 4½ cups stock; 2 cinnamon sticks (You can substitute the above spice with 2½ tsp mixed spices); 1 onion; 2 bay leaves; 1 kg–1.2 kg (2 lb 4 oz–2 lb 11 oz) mutton, cut into chunks; 1½ tsp pepper; 2½ tsp salt
