The Shanghaiese call these ‘oil-exploded shrimps’, which refers to the fact that they are deep-fried, but ever so quickly, in their shells. They can be prepared ahead of time.

Ingredients

  • 450 g (1 lb) raw shrimps in the shell, without heads (40–60 shrimps)

Method

  1. Thoroughly rinse the shells of the shrimps, rubbing with your fingers. Pat dry with kitchen paper.
  2. Prepare the sauce. Put the soy sauce, sugar, ginger juice, wine or sherry and the oil into a small bowl. Stir to mix.
  3. Heat the vegetable oil in a wok over a high heat until it reaches 180°C (350°F) in temperature. Add all the shrimps and fry, stirring th
