Ingredients

  • 1 cleaned octopus, 1.1–1.35 kilos (2½–3 lb)
  • the master stock with the bag of mixed spices

Method

  1. Heat a large pot of water until only fairly hot. Add the octopus and continue to heat, uncovered, for about 1 minute. Pour into a colander and rinse with cold water. Pull off as much as possible the membrane which covers the body and the tentacles. Using cocktail sticks, remove and discard the chalky eyes in the suckers on the tentacles. Rinse clean and drain.
