Like White radish pudding, this is Cantonese Chinese New Year food. It can, of course, be made at other times when there is taro around. The success of the recipe depends on having the right proportion of taro, rice flour and water, as well as the techniques of mixing them and steaming the pudding. Bianca Fu was inspiring on the technique, and we had great fun making the dish together.
