A Chinese cook often loves to play this game: to make one ingredient imitate another. He may not even use a cheaper ingredient to mock an expensive one, either; often it is the other way round, as in this sophisticated Sichuanese soup. Much ingenuity is applied before chicken breast takes on the appearance of a popular and inexpensive dish made with ground beans, which every family can afford.
