These squat cabbages, with white stalks and green leaves – some with pale green stalks – are less than half as long as the common baak choi. Living up to the idea that ‘small is beautiful’, they possess a more refreshing and subtle sweetness, and have a crisper texture than their larger cousins. They used to be native to just Shanghai and its environs, but are now grown in Europe and America, to the delight of Chinese abroad.
