A Very easy family dish that finds favour with Hunanese people. The fat that oozes from the wind-dried pork during frying will be used to fry the baby leeks while the pork slices will flavour them. Wind-dried belly pork imparts a special cured flavour to the leeks and it is quite easily available in Hunan, and indeed, throughout China. Outside China, it is not so easily available. Fortunately, streaky bacon, smoked or unsmoked, is a very good substitute, so do use it, if need be.
