These fresh shiny noodles, which are packaged in plastic bags and sold in Chinese supermarkets, are yellow in colour, round in shape and oily to the touch. They are already cooked, so that it is a matter of making a topping in the manner to which the Shanghaiese are accustomed. One characteristic of Shanghai food is its greasiness, so if you wish to cut down on the oil when frying the ingredients, do so.
