A Rural dish from the Chaozhou region with its distinctive cuisine, which is quite different from the mainstream Cantonese cuisine. The predominant seasoning, lime preserved in brine, would overpower fish with a finer taste and texture, but it works wonders with grey mullet. No surprise then that Chaozhou people love it.
It may be as well to point out that lime in Chinese is ‘green lemon’, and this may explain why the label on ajar of preserved limes actually reads ‘preserved lemon
