A Sophisticated Cantonese dish that is supposed to resemble the Chinese balloon guitar, the pipa. To achieve the resemblance, even by some stretch of the imagination, one has to split lengthways the breast side of the duck and break some of the rib bones so that the duck can lie flat. This also facilitates the smearing of the marinating sauce all over the cavity, thereby ensuring the characteristic taste and flavour of the duck.
