The Fujianese love to season poultry with hongzao (hungjo in Cantonese) which is made of fermented glutinous rice and red yeast, with a resultant sweetness all of its own. When I visited Singapore two years ago, Mrs Mok, who is a Fujianese, cooked this dish for me, and she emphasised the importance of the large amount of spring onions in it.
