Chinese chives are green, but blanched chives, having been shielded from light during their growth, are tenderly yellow. Compared to green chives, which have a decidedly stout flavour, blanched chives are much more subtle, and hence sought after by the Chinese. I love them so much that I can never have enough of them. For this reason, I’m using a lot in this recipe.

Fresh duck eggs can be used instead of chicken eggs. As they are usually large in size, use 3 instead of 4. Also Chine
