A Dish carrying much fame south of the Yangzi River, it features in Shanghai restaurants as well as in homes. Locally, it is made with fresh belly pork and salted leg joints, rendered the more delicious by the use of fresh bamboo shoots during springtime. Alas, we can only use canned bamboo shoots, although the end result is more than acceptable.
