Chinese Muslims in Peking are very fond of this dish, which is served both at home and in restaurants. In China it is considered a delicacy, but as lamb kidneys are inexpensive in the West, it makes a tasty everyday dish.

Method

  1. Remove the membranes encasing the kidneys, if any. Halve each kidney lengthways. Using scissors or a knife, cut off and discard the white, fatty and rank membrane inside. Place each half on a cutting board. With a pointed knife, make shallow, diagonal criss-cross cuts on both sides (or at least on one side) of the kidneys, then cut each half into 3 sections.
