There is a range of stuffings for Tangyuan, from a small lump of Chinese brown sugar to red bean paste, but none can top the black-sesame-seed stuffing in fragrance and in popularity. People in Peking and Shanghai adore this stuffing. Dr William Fong, originally from Peking, showed me how to make his version of it using electric gadgets, including a coffee grinder. We had great fun making it.
