Ginger juice is the juice pressed from ginger. Many Chinese home cooks keep a small jar of it in the kitchen so that it is easily to hand whenever it is called for. To preserve it, they add to it a very small amount of cooking wine.

Ingredients

  • 50 g (2 oz) ginger, peeled

Method

  1. Either chop the ginger very finely by hand or mince it in an electric herb mill or grate it with a ginger grater.
  2. Using a garlic presser, press out, 1 presserful at a time, the juice from the ginger, which will include some puréed ginger. Discard the pulp.
  3. If the juice is not to be used straightaway, add the wine or sherry and keep in a small jar in the
