  • 85 g (3 oz/½ cup) glutinous white rice, rinsed and drained

Method

  1. Spread out the two rices together and leave them until they are almost dry again.
  2. Heat a wok until very hot. Add the rices and, going to the bottom of the wok with the wok scoop, turn and toss over a medium heat for about 20 minutes or until the rices are dry and have taken on some colour and exuded an aroma. Transfer to a dish and let cool.
