Method

  1. Heat a wok over a medium heat until hot. Add the salt and stir for about 4–5 minutes until the salt is very hot and turning slightly greyish in colour. Transfer to a container and let cool.
  2. Add the ground peppercorns and Sichuan peppercorns and mix well.
