  • 1 large knob ginger, about 25 g (1 oz), peeled and bruised

Method

  1. Put the ginger, pork and chicken pieces into a large and deep stockpot and add the water. Bring to the boil over a high heat and skim off the scum and foam which surfaces until the water is relatively clear. Continue to boil, covered, over a slightly reduced but still high heat for 1–1½ hours until the stock appears milky in colour and is reduced to about a quarter. Drain t
