Pesto is not just perfect tossed with pasta, I promise. It works beautifully spooned over a piece of fish with a squeeze of lemon, used as a dip, whooshed on a plate and topped with caprese salad, or tossed with grilled string beans or really any vegetable you please.
In a food processor, pulse together the garlic, greens, and nuts until all the ingredients are roughly chopped.
In a slow steady stream, add the olive oil while pulsing the mixture. Continue until all the oil has been added and the mixture forms a loose paste.
Transfer to a bowl and fold in the cheese. Taste and adjust seasoning accordingly with salt.
