There are endless versions and possibilities with this classic Sicilian dish, and although many recipes call for celery (a vegetable I’ve learned to love), I opted to leave it out here. I wanted to concentrate on the richness of the layers of eggplant, peppers, and tomatoes and felt celery would be a detractor, but that’s just me. If you can, make this a day ahead of time so the flavors can become well acquainted. Be sure to serve this caponata either warm or at room temperature. Pack it on
