This is a straight-up, versatile grain salad that has lots of possibilities to play with. Try different nut, herb, and citrus combinations such as pistachios, mint, and orange or walnuts, dill, and lime. I like to keep my options open. A crumbly cheese such as feta or ricotta salata would also be a nice addition stirred throughout. You can serve this dish either warm or at room temperature, so feel free to prepare it a few hours in advance if you’re trying to get ahead of the game.
